Commercial Kitchen Grease Interceptor
Phase Separation & Oil Water

Commercial Kitchen Grease Interceptor

Grease interceptor for commercial kitchens, restaurants, food courts, and institutional catering to capture fat, oil, and grease before discharge to the municipal sewer.

The Challenge
Commercial kitchen wastewater carries 1,000 to 5,000 mg/L of fat, oil, and grease from cooking, dishwashing, and cleaning. Without interception the FOG solidifies in the municipal sewer at low temperature, causing the blockages and overflows that drive the highest single source of municipal sewer maintenance cost.
Quick Answer

Commercial kitchen grease interceptor captures fat, oil, and grease (FOG) from kitchen wastewater before discharge to the municipal sewer. The interceptor stages a gravity separator with a long retention time to allow the FOG to float and the solids to settle. Outlet FOG meets the local sewer consent (typically 100 to 250 mg/L).

Kitchen FOG Drives Municipal Sewer Blockages

Commercial kitchens, restaurants, hotels, food courts, hospital and school catering, generate wastewater with 1,000 to 5,000 mg/L of fat, oil, and grease (FOG) from cooking, dishwashing, and cleaning. The FOG solidifies as the water cools in the municipal sewer; the resulting blockages and overflows are the single largest source of municipal sewer maintenance cost globally. Regional sewer consents require on site grease interception for every commercial kitchen.

Gravity Interceptor Sized to Fixture Count

The SorbiTech kitchen grease interceptor is a gravity separator with a long retention time (typically 30 to 60 minutes at the design flow) that allows the FOG to float to the surface and the solids to settle to the bottom. Outlet water from the middle chamber meets the local sewer consent on FOG (typically 100 to 250 mg/L). Sizing follows the kitchen fixture count using the standard plumbing code formulas (Uniform Plumbing Code, International Plumbing Code, or regional equivalent).

Pre Cast Concrete or Fabricated Steel

The interceptor is fabricated in pre cast concrete (for new build and underground installation) or in fabricated steel with epoxy lining (for retrofit and above ground installation). Both variants ship with the standard inlet and outlet baffles, the sampling port for regulator inspection, and the manhole access for scheduled service.

Scheduled Pump Out Service

The interceptor is pumped out every 1 to 3 months depending on the kitchen volume; the recovered FOG and solids are removed by a licensed waste contractor for off site disposal (typically to a brown grease recovery facility or to anaerobic digestion for biogas production). SorbiTech maintains the operator service contract and the regulator documentation. Sector coverage is food and beverage.

Selection Guidance

Pre cast concrete or fabricated steel interceptor sized to the kitchen fixture count and the peak drainage flow. Required by sewer consent in most jurisdictions for restaurants and food service establishments.
